茄汁吮指排骨

Steps to make 茄汁吮指排骨

  • 1.排骨洗净备用。
  • 2.将洗净的排骨放在清水中浸泡半个小时以上,中间多换几次水。
  • 3.将泡好的排骨凉水入锅慢。
  • 4.加入适量料酒中火慢慢烧开。
  • 5.烧至肉色发白,水沸。
  • 6.不排骨用变熟不再有血水时捞出。
  • 7.放在干淀粉中打个滚,均匀沾在淀粉,并拍去多余的淀粉。
  • 8.油烧至180度,将将沾好淀粉的排骨放入。(保持中小火慢炸)
  • 9.炸至自已的喜好程度,捞出沥油。
  • 10.锅中留少许底油,入葱姜蒜炒香。
  • 11.加入番茄酱炒炒香。
  • 12.加入适量糖。
  • 13.适量盐、白醋、水调成自已喜欢的糖醋汁。
  • 14.烧开后倒入炸好的排骨。
  • 15.大火收汁至最后转中小火慢收。
  • 16.撒上芝麻即可。
  • 17.出锅装盘。
