Steps to make 龙井虾仁

  • 1.准备好茶叶和鲜虾。
  • 2.将虾去头、尾剥皮取虾仁。
  • 3.虾仁从背部开一刀去除虾线。
  • 4.虾仁用清水反复洗至洁白,沥干后加盐、绍酒、蛋清一起搅拌。
  • 5.等虾仁搅拌至有黏性时加入生粉一起拌均腌制半小时。
  • 6.龙井茶用80℃左右的水冲泡。
  • 7.1分钟后去茶汤,茶叶及剩茶汁待用。
  • 8.锅内放油烧至四成热,放入虾仁用筷子滑开。
  • 9.滑至变色迅速捞出。
  • 10.另起锅,倒入剩余的茶叶和茶汤煮沸。
  • 11.放入虾仁一起稍稍烹煮。
  • 12.出锅装盘即可。
