排骨冻
排骨软糯,冻QQ的特别香。

Steps to make 排骨冻

  • 1.排骨砍小块,洗干净飞水,沥干水备用。
  • 2.猪皮洗干净毛毛拔干净飞水,然后再查一下有没有毛毛,要拔干净毛毛,然后肉皮表面用刀多刮几面,另一面也要刮,把肥猪油刮干净,这样会少一点猪油在冻里,清理干净后反复用水揉洗,水清的时候就可以切小块了。
  • 3.猪皮切好后放适量的水,加一块生姜用高压锅压,从高压锅响开始计时,10分钟就可以了,解压后才可以开盖。
  • 4.锅放少许油化开冰糖。
  • 5.放一勺柱候酱炒到柱候酱出香味放少许盐下去,就可以关火了。
  • 6.猪皮煮好后把炒好的排骨放进去再开火压,也是从响开始计时,10分钟就可以了。
  • 7.煮好后就变成排骨肉皮浓汤了,然后把排骨摆盘,肉皮汤放进料理机里打细,再放锅里煮开,放少许鸡精调味,撇掉泡沫和多余的油。
  • 8.再把肉皮浓汤倒进摆好排骨的盘子里,晾凉放进冰箱里,成冻后改刀上盘。
  • 9.蒜头拍一下剁蒜米,葱切葱花放进小碗里,酱油、陈醋、油辣子各少许拌匀,然后淋到排骨冻上就可以上桌开动了^_^。
