榴莲芝士蛋糕
等了好久,一直让水果店老板留意的猫山王终于有货啦,迫不及待的抱了两个回来,特意留了几块,就是为做榴莲慕斯啊,做出来的香醇度完全不是普通的金枕头能比拟的,就做了六块,结果迅速瓜被分掉,只能可怜巴巴的小口小口的尝着我好容易留下拍照的这小块了〒_〒

  • 白砂糖30g
  • 朗姆酒10g
  • 淡奶油80g
  • 榴莲纯果肉80g
  • 蛋黄一枚
  • 吉利丁片1片(5g)
  • 牛奶15g

Steps to make 榴莲芝士蛋糕

  • 1.猫山王的肉,肉质细腻,颜色金黄,从色泽上就比金枕头好上很多,而且个头一般就是3市斤左右一个,不大,味道却很好。
  • 2.去核,称净重。
  • 3.蛋黄、牛奶、白砂糖、朗姆酒混合。
  • 4.隔水加热至糖化,整个过程需不停的搅打,使之加热均匀,液体边浓稠。
  • 5.不断得搅打,直至颜色发白,体积微微变大,液体冷却后能变得浓稠的程度(整个搅打过程大概需要3min左右)。
  • 6.榴莲果肉加入上一步冷却的蛋黄糊中,用料理棒打发至细腻柔顺。
  • 7.吉利丁片剪小,用冷水泡软。
  • 8.奶油奶酪软化,打发至顺滑无颗粒。
  • 9.加入第六步中的榴莲糊,搅拌均匀。
  • 10.泡软的吉利丁片放入微波炉中转15s左右,化成液体状。
  • 11.搅拌均匀。
  • 12.加入打发至七成的淡奶油。
  • 13.搅拌均匀。
  • 14.以一层蛋糕片一层慕斯液的方式放入模具中,(这个配方做了图中方形模具的三个整)。
  • 15.做好了,放入冰箱冷藏4小时以上即可脱模切块食用了。
