百吃不厌的咸菜—酱茄子
小时候到了秋末冬初万物枯萎的时候,奶奶就会把还挂在茄子殃上没成熟的小茄子摘下来给我们做这个咸菜,在那个物资匮乏的年代那可真算得上是美味了。现在条件好了我也会在买菜的时候看见这种小茄子会买回来做上一些。

    Steps to make 百吃不厌的咸菜—酱茄子

    • 1.原料分别洗净备用。大葱和香菜分别切段。
    • 2.坐锅烧水,八角姜丢进去,大酱放进去搅均化成大酱汤
    • 3.大酱汤这个颜色就差不多够了。
    • 4.汤烧开后放小茄子。大量的盐调味
    • 5.20-30分后茄子煮软了以后,用筷子扒中间看熟了但茄子皮没破的时候下黄豆籽。
    • 6.黄豆籽放如后5分左右下如大葱段。(先放葱白)
    • 7.大葱煮软后放香菜。(先放根和梗)
    • 8.香菜全部软了以后就可以关火了。撒味精。这个时候可以尝下咸淡,汤要咸一点茄子才有味道。
    • 9.盖盖子闷凉了以后才好吃。颜色不那么漂亮了,放冰箱里可以吃好久呢。
