麻辣小龙虾
每年夏季晚上,济南烧烤和小龙虾必不可少,就着鲜啤酒*,一个爽字了得!外面小龙虾好吃,但卫生终究比不上自己动手放心,况且外面随便一吃就一张红票子呢^_^我买的15元一斤,二斤一大盆,味道杠杠的~如果你也中意“麻小”,不如跟我学起来哈~

Steps to make 麻辣小龙虾

  • 1.活蹦乱跳的小龙虾2斤,用刷子挨个刷干净,反复几次,直到水清,捞出沥干备用。活的小龙虾我不敢碰,还是家人清洗的嘿嘿,虾线可以在吃时去除!
  • 2.按明细准备配料,葱姜蒜多一些,干辣椒掰开。
  • 3.锅中多放些油,为平时炒菜的三倍,爆香葱姜蒜
  • 4.中火下干辣椒、八角、香叶、花椒、麻椒(1:3),炒出香味转大火。(佐料宜多不宜少,图中的花椒、麻椒量少了,后面我又补加了一倍,各位参考)
  • 5.大火翻炒小龙虾,如果量大可以分批放入。
  • 6.小龙虾炒至变色后加入适量料酒、200ML啤酒(用白酒更好)、少量水、蚝油、盐和糖,盖盖焖煮。(小龙虾壳厚不易入味,盐、糖、辣椒、麻椒都要大大的量,意想不到的大量哈哈!汤不要太多,小龙虾量的2/3就好,不然收汁时间太久肉会老,图为汤沸起来模样,实际没这么多。)
  • 7.上图水开了大约再焖五分钟,开盖翻炒,直至收汁,这样肉质鲜嫩。不要炒干,留些汤汁比较美味,最后入少许醋和适量鸡精,关火。
