老北京小吃——驴打滚
驴打滚是老北京的传统小吃之一,成品黄、白、红三色分明,煞是好看。因在其外表要撒一层黄豆面,犹如老北京郊外野驴撒欢打滚时扬起的阵阵黄土,因此而得名“驴打滚”。材料其实也很常见。白的是糯米,红的是红豆沙,黄的是黄豆面。今天我在家用面包机来做一做这道传统小吃。先不管是否正宗,反正做出来的是真好吃!特别是红豆沙里加了玫瑰酱炒,更增加了浓郁的香味。

Steps to make 老北京小吃——驴打滚

  • 1.干黄豆清洗一遍,沥干水
  • 2.倒入面包桶中
  • 3.选择ACA面包机特色菜单中炒干货的程序,时间设定30分钟
  • 4.时间到,舀起几粒看看,颜色不错,尝一尝,因为热的原因,内部还有些软
  • 5.豆子倒进碗中,晾凉后再使用
  • 6.将凉透的黄豆倒进料理机杯中,启动坚果程序,将其打成细末
  • 7.打好的黄豆末过筛更加细腻
  • 8.280克糯米和320克清水准备好
  • 9.糯米另用清水清洗后,与320克水同入面包桶内
  • 10.启动糕点菜单下的年糕程序,用时1小时30分钟, 完全交给面包机来做吧
  • 11.时间到,糯米和水完全不见了,成了粘粘的细腻的年糕啦
  • 12.垫子上撒一层黄豆面
  • 13.擀面杖沾凉开水,将晾凉的糯米团擀成大薄片,再在上面均匀地铺上一层红豆沙
  • 14.卷成卷,表面已经沾上一层黄豆面了,可以再撒一层更像黄土了
  • 15.切块食用
  • 16.豆沙香甜,糯米筋道弹口,黄豆面细腻,真是好美味
