Steps to make 酱猪肘

  • 1.猪肘子洗净,刮一刮外皮的赃物,汆水,沥干
  • 2.沥干待用
  • 3.准备配料,葱姜蒜八角花椒桂皮冰糖红枣
  • 4.锅中放足量的水,加入配料,生抽老抽盐
  • 5.加入猪肘,水开后转中火,盖上锅盖焖烧
  • 6.约一个半小时后,汤汁变浓,肘子酥烂了。
  • 7.取出肘子,放入一个干净的炒锅中,盛少许汤汁进去,开大火,开始最后的关键一步。不停的用锅铲把汤汁浇到猪肘上,渐渐的汤汁收干,猪肘表面颜色非常鲜亮诱人。
  • 8.出锅
  • 9.猪肘冷却后,去骨切片装盘。可以放冰箱冰几小时再拿出来切,冰一下可以让肉质收缩,切好后吃起来更有嚼劲。
