Steps to make 酸甜娃娃菜

  • 1.娃娃菜3包、清洗干净晾干水分(如果家里有暖气,最好中午清洗晾到晚上制作。如果没有暖气,晚上睡前清洗晾到第二天中午制作。)
  • 2.制作所需的食材有:胡萝卜、盐、白醋、白砂糖、鸡精、味精、芝麻油、红醋、陕西油泼辣子(要想味道好,油泼辣子最好自己制作)
  • 3.把娃娃菜的外层和菜心分开,菜心单独放在一边待用。【菜心】
  • 4.首先把娃娃菜的外层菜叶每一片纵向切开成长条状,一片叶子可以切三条也可以切两条切忌不要切的太细。【以下是腌渍三包娃娃菜一共所需的盐,如果菜特别鲜活水分就大,那盐就需要在多一点】
  • 5.把切好的菜叶分成三份,先取一份放进一个菜盆中,撒上少许盐用手均匀的揉搓,力度一定要轻否则会折断菜叶。
  • 6.揉好盐的菜单独放好,切胡萝卜成片状不用盐揉,直接洒在盆地。
  • 7.再把刚才揉好盐的菜叶平铺在胡萝卜片上。
  • 8.用盐揉搓菜心,然后平铺在菜叶上。
  • 9.用保鲜膜盖上,放置20分钟。
  • 10.把以上用盐腌渍好的菜搅拌均匀后放进菜筐里盖上保鲜膜,空掉多余的水分。
  • 11.十分钟后........
  • 12.把多余水分倒掉,把菜全部倒入盆中,先放白醋(三包娃娃菜的用量是:原谅我没有量杯,在这里我只能用尺寸比表示,我用的海天牌白米醋450ml装,用学生尺从瓶口处量,我一共用了16厘米的量。)放入每一种调味品后都要搅拌均匀后,再放下一味调味品.......
  • 13.以上程序全部完成后如下:(三包娃娃菜所需的容器大小是1.9L左右,我虽然比较喜欢用特百惠的产品,但是,在腌制泡菜方面,我个人认为还是乐扣比较好用。)
  • 14.二十分钟后............(在容器口放一个保鲜袋以免汁水沾在盖子上不好清洗,个人经验!)
  • 15.放置冰箱冷藏一星期都不会变质,三包的量一般可以吃5天。酸酸甜甜,在配上陕西油泼辣子的辣,是泡面和稀饭的好伴侣....)
