广式藤椒牛肉月饼
这个中秋一直做了不少甜味月饼,总想试试咸味月饼,于是尝试做了这款广式藤椒牛肉馅月饼,味道杠杠滴,作法简单易行,特此推荐给大家。

Steps to make 广式藤椒牛肉月饼

  • 1.先准备好所有原材和设备。
  • 2.我选用了新良月饼面粉
  • 3.馅选用了苏旺家的藤椒牛肉馅
  • 4.一次性加入油,糖浆,枧水,盐等。
  • 5.用打蛋器搅拌均匀
  • 6.搅拌均匀后的水油不再分离达到如此状态
  • 7.面粉和奶粉过筛后分两次加入并搅拌均匀
  • 8.搅拌均匀后的面团加盖保鲜膜、密封松弛2个小时。
  • 9.松弛后的面团分成10份搓成小球,每个小球重21克左右。藤椒牛肉馅按30克一个搓成10个小球。小球要及时加盖保鲜的。
  • 10.面团用手掌在案板上压成里厚外薄的圆形面皮,然后用刮板从边上铲起放回手掌里。
  • 11.饼皮和馅放在左手
  • 12.左手将饼皮和馅放在手心,右手将馅团往里推,左手旋转将饼皮均匀推开紧贴着馅团,直至包住整个馅团。
  • 13.最后左手虎口收紧,双手搓成一个光滑的月饼生坯。
  • 14.双手沾点五米淀粉防粘,将月饼生坯光滑的一面对准送入模具。
  • 15.我喜欢做成薄的饼,因此用了63克模具,用手把月饼生坯放入模具后按紧。
  • 16.模具对准烤盘双手用力均匀垂直压下,抬起月饼模,推出月饼生坯。
  • 17.进烤箱前的月饼酱紫
  • 18.烤箱200度预热10分钟,烤盘送入烤箱后,对着烤箱里喷雾状的水,让水蒸气掉在饼皮上。然后烤箱设置180度上火,150度下火,中层烤5分钟定型后拿出来刷蛋液。
  • 19.刷了蛋液的月饼再送入烤箱中层上下170度15分钟烤至表面上色后取出放凉。
  • 20.月饼放凉后密封包装,两天后回油再食用,回油了的月饼酱紫,咬一口饼皮软软的,藤椒牛肉香味浓郁,味道杠杠滴。
