    Steps to make 泡菜

    • 1.将备淹的蔬菜提前一天洗净晾干水气。菜椒要撕开晾。
    • 2.我喜欢的小红椒。选精神的。在市场上买的要多用水泡泡。
    • 3.这个小红椒准备整个淹制的,晾去表面的生水就行了。
    • 4.事先洗净的泡菜坛,晾干,不能有生水和油(都是这么说的,可南方农村直接用生水泡,也很好,可能是我们城里的水质不行吧。)将花椒、八角、桂皮、盐用开水煮十分钟,晾凉入坛。
    • 5.坛中放入晾好的蔬菜。
    • 6.泡菜水要没过蔬菜,放入姜、大蒜、冰糖。
    • 7.好了,盖盖,我淹了好几坛。
    • 8.避光放置,等一周以后就要以吃了。
    • 9.当小菜下饭不错,开胃啊。我最爱用这些泡菜烧鱼和肉。
