广式月饼
前几天做了热身的冰皮月饼,今天正式开始俺的月饼革命。

  • 中筋面粉200克
  • 转化糖浆155克
  • 植物油50克
  • 枧水2.5克
  • 吉士粉15克
  • 一点

Steps to make 广式月饼

  • 1.糖浆150克+枧水2.5克+植物油50克+盐一点混合均匀。
  • 2.筛入15克吉士粉。
  • 3.两者混合拌均。
  • 4.筛入200克面粉。
  • 5.用刮刀拌均。
  • 6.揉成光滑的面团。
  • 7.揉好的面团装入保鲜袋放冰箱冷藏松弛2小时。
  • 8.将面团分割成每个35克滚圆,馅料每个60克备用。
  • 9.红豆沙53克包入一个12克的蛋黄滚圆备用。
  • 10.绿豆沙55克包入一个10克的板栗滚圆备用。
  • 11.拿一个月饼皮在手掌按成中间薄四周厚,包入一个馅料滚圆。
  • 12.将包好的月饼生胚滚少量干面粉。
  • 13.放入磨具造型。
  • 14.将造型好的月饼放入铺了锡纸的烤盘上,表面喷水放入烤箱。
  • 15.月饼烤5分钟定型以后,从烤箱中拿出,放至温热,表面刷蛋液,再烤15分钟左右即可。
