Steps to make 黑糯米酒煲鸡汤

  • 1.准备食材:走地鸡、黑糯米酒、姜、葱头。
  • 2.处理食材:走地鸡洗净、去掉残留在鸡皮上的细毛,斩成块。干葱头去皮洗净、拍扁。生姜去皮洗净,切片。
  • 3.热锅、倒少许食用油,加入鸡肉大火翻炒片刻。
  • 4.加入姜片继续拌炒。
  • 5.倒进干葱头。一直保持大火不停翻炒,炒至鸡皮收缩、鸡肉发白,香味溢出。
  • 6.倒进黑糯米酒。
  • 7.加上纯净水,大火煮沸。
  • 8.再盛入砂锅中,遮上锅盖、调成中火煮30分钟左右。
  • 9.煮至鸡汤剩下不多、调入盐。
  • 10.调入少许鸡粉,搅拌均匀即可。
