酥焖鲫鱼
这道菜基本做出了我想要的口味儿,酸甜咸香酥,主要是肉很入味儿,吃起来刺也都软了。稍稍不恰当的就是鱼用的比较大,要是鱼再稍小些,就更加完美了。
材料:鲫鱼 葱姜蒜 淀粉
调料:盐 糖 生抽 老抽 料酒 五香粉 高汤

    Steps to make 酥焖鲫鱼

    • 1.鲫鱼杀洗干净擦干水份,加生抽料酒和葱姜碎腌上。
    • 2.腌好的鱼拍上干淀粉。
    • 3.坐锅烧油,油要热到冒烧的程度,放鱼入锅炸制。
    • 4.炸好的鱼要回一下锅,保证鱼炸透。
    • 5.倒出热油,留下低油,将葱段姜片辣椒放在锅中爆一下。
    • 6.将鱼放在锅中,
    • 7.加上调料(糖醋老抽生抽料酒),看到的白色调料为糖,这个菜糖和醋的用量都比较大。
    • 8.加上高汤,大火烧开,转小火焖至鱼完全入味儿,关火焖在锅中。
    • 9.这道菜可以冷吃也可以热吃,热吃最好用蒸的方法加热,避免鱼被弄碎。
