Steps to make 【浙菜】鳝爆虾

  • 1.准备的材料。
  • 2.宰杀好的鳝鱼洗净切菱形块,加盐、料酒腌制一下,加水淀粉和面粉拌匀。虾仁用盐、蛋清、胡椒粉、葱姜粉、淀粉腌制拌匀。
  • 3.蒜拍成末放入碗中,加生抽、糖、醋、水淀粉调成芡汁。
  • 4.热锅冷油倒入虾仁滑炒变色捞出。
  • 5.锅中倒油,油热后放入鳝鱼片炸至金黄色捞出,再复炸一遍。
  • 6.加入虾仁,倒入芡汁。
  • 7.翻炒几下,裹匀芡汁。
  • 8.装盘即可。
