XO酱鲍鱼煲仔饭
第一次用鲍鱼来做煲仔饭,调配烧制出来的味道还真不错。我做的是两人份的。

    Steps to make XO酱鲍鱼煲仔饭

    • 1.准备各种材料:鲍鱼、西兰花、玉米、芹菜、鲍汁、XO酱、蠔油。鲍鱼壳不要丢掉,可以拿来煲汤。
    • 2.香米提前浸泡好,蠔油加开水调开。
    • 3.芹菜切丁,玉米剥粒。
    • 4.鲍鱼加生粉抓洗干净。
    • 5.鲍鱼切花刀方便入味和口感更好。竖向垂直切,横向斜刀45度切。
    • 6.切好的鲍鱼。
    • 7.鲍鱼加入XO酱、鲍汁、芹菜粒、味精腌制。
    • 8.泡米饭的水倒干,玉米粒放入米饭内,加入与米饭等量的开水,加盖开大火烧制。
    • 9.烧开后改小火继续烧制。
    • 10.待米饭烧至收水(米面有洞洞),放入鲍鱼再盖上盖子仍小火烧制。
    • 11.待米饭间隙的水分蒸发差不多了(锅内声音渐小,可用筷子插探),朝锅边缝隙均匀旋入少量油炸锅巴。
    • 12.盖上盖子分别朝前后左右倾斜放置并停留一会,在炸锅巴了。
    • 13.四个方向烧好先放置小盘子上。
    • 14.西兰花摘块洗净。
    • 15.西兰花放入开水淖熟。
    • 16.将鲍鱼挪一边,放入西兰花,面上淋蠔油就好了。
    • 17.鲍鱼壳不要浪费拿来做汤,提前与猪骨一起淖水后下砂锅煲煮一小时。准备青瓜切条备用。
    • 18.煲煮至差不多了,青瓜放入汤内煮熟。
    • 19.加入味精、盐和芹菜粒就好了。
