麻辣鸭头鸭翅
要说南京人吃鸭子那绝对不是盖的:皮酥肉嫩、肥而不腻、一整只鸭子里外都有吃头!在南京街头巷尾到处都有鸭子店铺,深受老百姓的爱戴,轮着名家店铺排队都会排到没朋友的。
我家除了经常去鸭子店买现成的盐水鸭、烤鸭外,时常还会自己在家做鸭肉美食:烤、炖、煮、烧都有;也特别是喜欢啃鸭头、鸭脖和鸭四件。
以前也经常卤鸭四件,但通常都是卤酱色的,却从没有做过麻辣的;那天也是看到冰箱还剩着半包火锅底料,天热担心吃火锅上火,突然想到了平时爱吃的麻辣鸭脖;嘿嘿:那就干脆用它做卤麻辣鸭头鸭翅,味道应该不会错。担心火锅底料量不够又加不少郫县豆瓣酱;亲们猜猜看:味道如何?哈哈:悄悄地告诉你:味道真是太好了、太好了~~~

  • 鸭头3个
  • 鸭翅1010克
  • 香叶1片
  • 桂皮1块
  • 八角3瓣
  • 生姜4片
  • 葱叶6段
  • 白糖1汤匙
  • 食盐2小勺
  • 干辣椒3瓣
  • 火锅调料60克
  • 郫县豆瓣酱2汤匙

Steps to make 麻辣鸭头鸭翅

  • 1.准备好所有食材
  • 2.用镊子将鸭翅膀上的杂毛镊掉
  • 3.再将鸭翅膀的尖角切掉1CM左右
  • 4.冷水入锅焯烫去腥后冼净备用
  • 5.炒锅加热煸香:葱姜、桂皮、八角等调料
  • 6.再放入火锅底料炒香
  • 7.可再调些郫县豆瓣酱炒香
  • 8.倒入清水加盖大火煮开
  • 9.与焯水后的鸭翅膀一起倒入煮锅中加盖大火
  • 10.煮开后放入白糖、老抽转小火
  • 11.待鸭翅膀煮至熟烂时加入食盐调味
  • 12.稍后关火浸泡入味
