尖椒兔
尖椒兔是在重庆很常见的一道菜,我印象中的尖椒兔,除了美人椒外,还要用到青花椒和绿色小米椒的,可惜这两样我都没有,只好用红花椒和干辣椒代替了,不过味道依然很好。
只要好吃,美食当然可以随心所欲。

    Steps to make 尖椒兔

    • 1.兔肉洗净切丁,切小一点,料酒、盐、淀粉、白胡椒粉拌匀去腥入味。
    • 2.葱切段,姜蒜切片,花椒、干辣椒、八角、桂皮洗净备用,花椒的量可以稍稍多一点。
    • 3.半调羹醋,半调羹味极鲜酱油,一调羹料酒,适量糖调成调味汁备用。
    • 4.美人椒切小段。
    • 5.热锅冷油,油热后入兔丁,中小火翻炒,多炒一会儿,把兔肉中的水分炒出来,兔肉才干香。
    • 6.入第二步中的所有调料,中小火翻炒出味儿。
    • 7.入美人椒大火翻炒。
    • 8.入调味汁翻炒。
    • 9.调入盐,关火后调入鸡精起锅。
