记忆中的红糖五仁月饼
临近中秋,婆婆说让我给她做月饼,指定要五仁月饼,正好家里有红糖粉,结合了家里的坚果,做了这款红糖五仁月饼。婆婆看到馅料的时候说有点像她记忆中的五仁月饼,回油后吃了告诉我,就是这个味,她曾经念念不忘的五仁月饼。配方可以做23-24个50克月饼

  • 中筋面粉205克
  • 花生油40克
  • 枧水4克
  • 核桃仁66克
  • 葵花籽仁66克
  • 花生66克
  • 燕麦片66克
  • 黑芝麻58克
  • 冬瓜糖58克
  • 蔓越莓31克
  • 红糖粉40克
  • 玉米油43克
  • 奶粉40克
  • 熟糯米粉125克
  • 凉开水112克

Steps to make 记忆中的红糖五仁月饼

  • 1.转化糖浆,枧水,玉米油,倒入干净的碗里,混合均匀
  • 2.加入过筛好的中粉
  • 3.戴上一次性手套把面团抓成团
  • 4.面团装入保鲜袋,室温下静置2小时左右
  • 5.把核桃仁,葵花籽仁,黑芝麻,燕麦片分别用烤箱150度烘烤5分钟,花生烤7分钟,颗粒大的可以切碎一点,冬瓜糖切颗粒,蔓越莓切细条,所有五仁馅材料放入盆里(可以放刚才和面的盆里)
  • 6.戴上一次性手套把五仁馅材料混合均匀,抓成一个大的馅料团,盖上保鲜膜静置30分钟
  • 7.把五仁馅料按照35克一个分成24个
  • 8.把月饼皮按照每个15克分成24个
  • 9.戴上一次性手套,取其中一个面团用2个掌心的摩擦力按扁,放上五仁馅
  • 10.手心合起来,用虎口把面团慢慢收圆,皮厚的地方可以推到皮薄的地方,尽量推的均匀一点
  • 11.把月饼球放入50克模具里,可以按压一下模具边缘,印出来的花纹更立体
  • 12.月饼模具倒扣在烤盘上,向下按压,轻轻提起模具
  • 13.所有月饼全部做好以后用喷水壶喷一点点水,静置10分钟,同时预热烤箱180度
  • 14.180度烤6分钟定型取出
  • 15.在定型好的月饼上刷一层薄薄的蛋液,不要刷太多,尽量用毛刷来刷
  • 16.月饼放回烤箱180度烤13-15分钟。上色后及时加盖锡纸,烤熟后晾凉。等待回油
  • 17.红糖五仁月饼有浓浓的红糖香味
