Steps to make 双椒炒鱿鱼

  • 1.将鱿鱼的红褐色表皮撕掉。
  • 2.将鱿鱼剖开,掏出肚内类似塑料片的脊椎骨、白色粘膜及所有脏物。
  • 3.里面朝外,呈45度角、间隔3毫米轻划斜刀,划完后以之前的划线呈90度角、间隔3毫米再次轻划斜刀。
  • 4.然后将划好的鱿鱼片切成片,装盘备用。
  • 5.锅里烧开水,放入鱿鱼片汆烫,看到鱿鱼片卷曲立即捞起,浸泡在冰水里。
