特色小吃—扁肉燕
肉燕是福州的特色小吃之一,据说这道菜还有一个典故,有平安吉祥的喻意,因此在本地节日和婚宴上必不可少一道菜肴。家家户户都会做,只是在馅料上略有差异,全凭个人的喜好,做起超简单,蒸、煮两相宜。制作燕皮是一道非常繁锁的过程,而且是全手工做的。做燕皮老板和我同住一个小区,近水楼台先得月,皮就买新鲜好做。

Steps to make 特色小吃—扁肉燕

  • 1.用盐、生抽、糖加少许葱花拌匀腌制(喜欢素一点还可加荸荠或白地瓜)。右边的就燕皮,用猪肉和地瓜粉拍打而成的,与纸张一样薄,制作过程很费时费力,在福州随处都可以买到,只有三个品牌是最好的。
  • 2.一手托燕皮,一手夹肉馅,收口即可,比包饺子还便捷不用担心露馅。
  • 3.把包好的肉燕整齐地码在篦子上。
  • 4.上锅蒸10分钟,出锅,这样就可以直接食用了,趁热吃味道最好,凉了可以放冰箱速冻,想吃时候随时都可以煮。
  • 5.用高汤或清水煮开,下肉燕,放几片芹菜叶、几香油,煮开起锅。
