自制香辣酱
一说起香辣酱就会想起驰名中外的老干妈,吃了多年的老干妈,现在终于可以自己制作了,而且味道也很棒。
这款辣酱的步骤看似比较多,其实操作起来也并不复杂,比较简单,喜欢的朋友可以试试哦。

  • 原味豆豉150g
  • 里脊肉50g
  • 菜籽油200g
  • 料酒15g
  • 姜末15g
  • 生抽15g
  • 老抽5g
  • 20g
  • 辣椒面50g
  • 花椒面5g
  • 鸡精2g
  • 熟白芝麻10g
  • 3g

Steps to make 自制香辣酱

  • 1.150g的豆豉,取50g剁碎(不用太碎,大颗粒就可以)
  • 2.里脊肉切小粒,姜切末
  • 3.花椒粉和辣椒面
  • 4.熟白芝麻和白糖
  • 5.锅中倒入200g菜籽油,开大火将油烧冒烟后关火(这一步是为了去除菜籽油中的异味)
  • 6.待油温降至低温状态倒入肉粒,开中火,并用锅铲将肉粒炒散(如果油温高了,肉就容易起坨,不容易散开)
  • 7.把肉粒水分炒得差不多时下入姜末、料酒、生抽、老抽煸炒片刻
  • 8.下入碎豆豉和整粒豆豉,转中小火煸炒约5分钟
  • 9.待豆豉炒香后放入白糖和辣椒面,再次煸炒5分钟
  • 10.炒出香味和红油后调入盐,炒匀后关火
  • 11.放入花椒粉
  • 12.熟白芝麻和鸡精
  • 13.翻炒均匀即可出锅
  • 14.放凉后,装入密封瓶中,放入冰箱冷藏,可保存半年至一年
  • 15.就馒头、饼,炒菜、拌面条,味道都不错哦!
