Steps to make 月饼季之冰皮奶黄月饼

  • 1.饼皮做法:将主材料中所有粉类混合
  • 2.加入牛奶和玉米油,用手动打蛋器充分打匀,静置片刻
  • 3.蒸锅中水烧开后开小火,把拌好的面糊放蒸锅蒸20分钟,蒸好的面糊拌匀放凉
  • 4.内馅做法:将辅料中所有材料按先后次序放入盆中,用手动打蛋器充分打匀,成顺滑的糊状
  • 5.蒸锅中水烧开后开小火,把拌好的奶黄糊放蒸锅蒸30分钟,期间搅拌三四次,蒸好后放凉
  • 6.沾粉:取所有材料外的糯米粉适量,炒熟
  • 7.戴好一次性手套防粘,饼皮平均分成六份;每个面团加入不同颜色的果蔬粉揉成圆球,再分为25克一个的面团,剩余的留做装饰花
  • 8.将奶黄馅分成25克一份,揉成圆球
  • 9.取一个饼皮面团放手心压扁,中间放入奶黄球
  • 10.将饼皮在虎口处慢慢往上推,直至把奶黄完全包住
  • 11.月饼坯全部包裹完成
  • 12.月饼模里撒一些糕粉,晃一晃,使糕粉均匀的沾在月饼模上,再把月饼模在手心磕一磕,将多余的糕粉磕出来。取少许彩色面团填在花片中轻轻压实
  • 13.再将包好馅料的面团收口朝上放入模子中压实后倒出
  • 14.用不同的颜色面料配于不同的模具花板,完成全部月饼制做
