Steps to make 凉拌麻辣金鲳鱼

  • 1.昨天买了一条金鲳鱼比较大,只吃了魚的上半部分,今天用下半部分做一款凉拌鲈鱼。
  • 2.金鲳魚肉比较厚,切窄条花刀容易入味。
  • 3.加入葱丝,姜丝、料酒腌制15分钟(反复翻动)。
  • 4.锅中水烧开,加入料酒,放入金鲳鱼、小火似开非开的水将魚煮透浸熟。
  • 5.将青笋事先洗净去皮,擦成丝。
  • 6.水开将青笋丝烫一下去生即可。
  • 7.反复过凉水捞出控水,放入小锅底层。
  • 8.将熟的金鲳鱼放在青笋丝上面。
  • 9.这碗料汁是提前兑好的,如果喜欢凉爽的口感可放冰箱冷藏口感更好。
  • 10.将料汁倒入锅中,青、红椒圈、蒜末入魚身上、锅中烧热油浇在上面即可。
  • 11.然后把川系花椒调和酱(麻辣)根据个人口味需求,舀2勺放入魚汤汁中和匀即可。
