手撕包的初次试验,山寨得很不错哦

  • 酵母粉2g
  • 无盐黄油15g
  • 全蛋液15g
  • 80g
  • 1g
  • 包裹入用:无盐黄油30g
  • 白糖30g

Steps to make 手撕包

  • 1.所有材料除黄油外,放入和面桶,用筷子搅拌成絮状,用手整成团
  • 2.打蛋器装上和面棒,插入面团中,启动进行和面,加入软化的黄油,继续和面到扩展阶段
  • 3.扩展的出膜状态
  • 4.面团,进行发酵2倍大
  • 5.取出发酵好的面团,在案板上揉去空气,盖上保鲜膜松弛15分钟
  • 6.擀成方形大片
  • 7.黄油放在中间(我偷懒,整块包入了,最好整成薄片再包入)
  • 8.如图包起来
  • 9.轻轻擀开
  • 10.如图折起来,放冰箱冷冻10分钟
  • 11.取出再擀开(漏油了……)
  • 12.先向图7一样折起,再从上往下卷起
  • 13.切成一圈圈
  • 14.叠放入烤模,(长的模具我先刷了黄油,再垫上了油纸防粘)
  • 15.放入烤箱第二次发酵
  • 16.2倍大时取出,预热烤箱180度
  • 17.刷上蛋液
  • 18.放入预热好的烤箱,调180度,中层,25分钟(温度时间供参考!)
  • 19.中途上色后可盖上锡纸,出炉……
  • 20.照样的奶香味很香浓!
