京酱扒全茄

  • 甜面酱200克
  • 料酒1茶匙
  • 酱油15ML

Steps to make 京酱扒全茄

  • 1.茄子去蒂,留着两头中间纵向切成三厘米左右长条
  • 2.尖椒、蒜剁成细末;肉切细丝用酱油、料酒、盐腌5分钟。调酱:甜面酱、香油、白糖、盐、鸡精、两勺水
  • 3.热锅放油煎茄子,温量没过茄子一半即可,茄子煎软后盛出待用
  • 4.锅留底油把肉丝滑熟,肉丝稍有硬度后盛出
  • 5.热锅放油,爆蒜末放酱料,加一勺清水,倒入煎好的茄子,让汤汁小火收干
  • 6.茄子入味后盛出,余下汤汁放入两勺水淀粉
  • 7.将汤汁浇在茄子上;肉丝、尖椒末、蒜末均匀摆在茄子上。
