肉松面包
本来想做卷卷的,结果放进烤箱之后去忙活别的,时间烤的稍微久了些,等到卷的时候发现表面会裂开,最后只好做成肉松夹馅的面包啦。。

材料:
汤种:高筋面粉25g,清水110g
面团:高筋面粉240g,酵母4g,盐2g,细砂糖25g,奶粉17g,蛋液52g,水50g,黄油30g
馅料:沙拉酱适量,海苔肉松100g

Steps to make 肉松面包

  • 1.将25g高粉和110g清水一起倒入小锅中
  • 2.充分搅拌均匀
  • 3.小火加热,并不断搅拌
  • 4.直至成为浓稠的糊状
  • 5.倒入小碗中晾凉,冷藏1小时备用
  • 6.将面团材料中,除黄油外的其他材料加入面包桶中
  • 7.倒入冷藏好的汤种
  • 8.将桶放入面包机中固定好,启动和面程序,20分钟
  • 9.程序结束,面团已经揉光滑,加入室温下软化的黄油
  • 10.重新启动和面程序,20分钟
  • 11.此时面团已经能拉出薄膜
  • 12.取出面团稍微整形后放入小盆中进行基础发酵
  • 13.发酵至约2倍大小
  • 14.揉匀排气
  • 15.将面团擀成大致呈方形,比将要使用的烤盘稍微大一些的样子
  • 16.在烤盘内侧均匀的抹一薄层黄油
  • 17.然后将擀好的面团放入烤盘,整理平整后进行二次发酵
  • 18.酵至约1.5倍大小
  • 19.表面刷一层蛋液
  • 20.然后在表面均匀的戳一些洞
  • 21.均匀的撒一些干香葱后送入预热好的烤箱,中层180度约20分钟
  • 22.出炉后用一张油纸盖在烤盘表面
  • 23.翻转扣出面包,晾至温热
  • 24.在面包表面抹一层沙拉酱
  • 25.均匀的撒满肉松
  • 26.然后从中间位置切开,将两半面包对折,之后切成喜欢的大小即可,注意密封保存,并尽快食用
