烤鸭鲜肉月饼
烤鸭鲜肉月饼外皮酥脆易碎,内包鲜美多汁的肉馅和烤鸭,咬一口丰腴的肉汁慢慢渗透其间,可谓一绝。

Steps to make 烤鸭鲜肉月饼

  • 1.将烤鸭肉切成适量大小。
  • 2.往猪肉糜和烤鸭肉中加入生抽、料酒、耗油、红糖,向一个方向搅拌,一直搅拌到肉馅可以粘成一整团,冷藏待用。
  • 3.将水油皮中所有食材放入厨师机,揉成柔软光滑的面团,盖保鲜膜,室温醒面15分钟。
  • 4.将油酥里的食材混合,捏成柔软的面团,盖保鲜膜,放入冰箱冷藏醒面15分钟
  • 5.取出醒好的水油皮和油酥,平均分成20等份,分别滚圆待用。
  • 6.取一小团水油皮,包入一团油酥,用虎口收口滚圆即成酥皮面团,盖上保鲜膜,醒面15分钟
  • 7.取出一个醒好的酥皮面团,按扁后用擀面杖擀成长椭圆形,然后自上而下卷起来。依次卷好所有的酥皮面团。
  • 8.将面团再次按扁,用擀面杖擀成牛舌形,再一次自上而下卷起来,将所有的面团都做好后,最后盖保鲜膜醒面15分钟。
  • 9.取一个醒好的面团,将两头向中间窝起来,然后按扁,用擀面杖将面皮擀薄一些,装入肉馅,用虎口将肉馅收口。把肉饼轻轻按扁,整形成月饼状,可以在月饼上稍加装饰。
  • 10.放入蒸烤箱,烘焙烤,180度,20分钟。
