棉花蛋糕
棉花蛋糕,听名字就知道这款蛋糕口感是属于绵密柔软型的,绝对对得起棉花二字,可以抹上果酱,奶油等,也可以什么都不加,直接切块食用,细腻绵密的口感伴随淡淡奶香绝对让你停不了口!

  • 牛奶80克
  • 低粉80克
  • 鸡蛋6个
  • 细砂糖90克
  • 1克
  • 柠檬汁3滴

Steps to make 棉花蛋糕

  • 1.准备好5个鸡蛋,蛋黄与蛋白分开,1个全蛋
  • 2.黄油切小块放入锅内
  • 3.小火加热至黄油沸腾时立即关火
  • 4.趁黄油沸腾时倒入面粉搅拌均匀,制成烫面团
  • 5.在烫面团里加入一个全蛋,用橡皮刮刀轻轻上下翻拌均匀,再加入其余5个打散的蛋黄,同样翻拌均匀
  • 6.倒入牛奶翻拌均匀
  • 7.拌成可流动状态的稀面糊
  • 8.其余5个蛋清加入盐和柠檬汁,电动打蛋器低速打至呈鱼眼泡时加入1/3细砂糖
  • 9.继续搅打至蛋白呈浓稠,较粗泡时再加入1/3细砂糖,再继续搅打蛋白至出现纹路时把其余1/3细砂糖加入,继续搅打一小会,提起打蛋器,出现尖角且末端处弯曲轻微下垂时就是偏干性发泡
  • 10.取1/3打发好的蛋白糊到蛋黄糊里,轻轻上下翻拌均匀
  • 11. 再将拌好的面糊倒回原先打发的2/3蛋白糊里,同样手法翻拌均匀,使其充分融合,成为浓稠细腻的蛋糕面糊
  • 12.把蛋糕面糊倒入不粘的蛋糕模里,轻轻震一下去掉大气泡
  • 13.烤箱预热140度,烤箱中层上下火烘烤60分钟
  • 14.烤好后取出将蛋糕倒扣在晾架上,也可以不倒扣
  • 15.冷却后脱模,切块即可食用,也可加入果酱,奶油,水果一起食用
