烙春饼
吃春饼的习俗,历史悠久。春饼、春卷是古人心目中的春的象征。吃春饼的时候将和菜包起来,从头吃到尾,叫“有头有尾”,取吉利的意思。
          春饼里面可以包肉,素菜等,还可以卷起来炸起来吃。今天包的是很开胃的酸辣土豆丝。

    Steps to make 烙春饼

    • 1.面粉放大碗里,徐徐倒入开水,搅拌成絮状。
    • 2.把面团揉成团放一边合盖醒30分钟。
    • 3.醒好的面团再次揉光滑后搓成棍状后分成小剂子。
    • 4.每个剂子压扁擀成圆面皮。
    • 5.取块面皮抹点油,再盖上另一张面皮,如此盖上6-8张面皮为一分。
    • 6.把(5)略为擀薄擀圆,要正反两面轮着擀。
    • 7.锅烧热后(不放油),转小火,把(6)放进锅里,烙半分钟左右翻面。
    • 8.从边用叉子或筷子把烙好的那一面掀起,放到另一个盆子里(要用东西盖上)。
    • 9.如此反复轮流把两面烙熟,掀起即可。
    • 10.烙好的春饼卷上自己喜欢的菜就可以开吃了。
    • 11.这方法是从小牛筒子那学来的,觉得非常好用,擀出来的饼真的有点“薄如蝉翼”。
