酱黄瓜

  • 食盐150g
  • 白醋200ml
  • 生抽200ml
  • 冰糖150g
  • 辣椒少许

Steps to make 酱黄瓜

  • 1.黄瓜洗净晾干。
  • 2.切成小段。
  • 3.拌入盐,放置一晚上,会腌出很多水。
  • 4.准备蒜、生姜、辣椒、冰糖。
  • 5.取一干燥的罐子,倒入生抽、白醋,再放入姜、蒜、冰糖、辣椒浸泡。
  • 6.把腌出的水倒掉。
  • 7.沥干盐水后的黄瓜放入姜蒜汁中,浸泡6个小时。
  • 8.把腌黄瓜的汤汁倒到汤锅中,控干。
  • 9.倒出的汤汁加热煮沸5分钟,晾凉。
  • 10.再把晾凉的汤汁倒回到腌黄瓜中浸泡,此过程重复2—3次。
  • 11.腌制好的酱黄瓜放入乐扣碗中保存。成品酱香浓郁,酸甜爽脆,是一碟最下饭的小菜。
