【全麦葡萄干面包卷】
家里有之前积分兑换的全麦面包粉,一直没打开来用,之前普通的高粉用没了,才想起这个全麦粉,想了想,觉得和葡萄干应该很搭,就试着做了一次。口感相对一般的甜面包来说是稍微粗糙了些,但确实适合细细品味的那种。

材料:
全麦面包粉280g,酵母3g,盐3g,细砂糖33g,牛奶171g,黄油28g,葡萄干90g

Steps to make 【全麦葡萄干面包卷】

  • 1.将葡萄干清洗后浸泡20分钟
  • 2.沥干水分备用
  • 3.将除葡萄干、酵母和黄油外的其他材料都装入面包桶中
  • 4.将桶放入面包机中固定好
  • 5.酵母放入盖子上的酵母粉盒中
  • 6.设定程序:按“功能”键选择“面包”版块,然后按“菜单”键选择“杂粮面包”,启动程序,重量及烧色为默认750g烧色中,程序完成所需时间3:46
  • 7.程序开始后的10分钟为浸泡时间,之后开始搅拌,1分钟后自动投放酵母,待3:21时,加入软化的黄油
  • 8.揉好的面团,开始进入发酵阶段
  • 9.发酵好的面团,用沾了面粉的手指戳洞,不缩不塌,发酵刚好,按暂停键
  • 10.取出面团揉匀排气
  • 11.分割缝四份
  • 12.分别滚圆
  • 13.取一个面团擀成长条状,压薄短底边
  • 14.卷起并封口,然后依次将剩余几个面团也处理好
  • 15.取一个卷好的面团,再次擀开并压薄短底边
  • 16.表面撒些葡萄干
  • 17.卷起并封口
  • 18.依次将剩余面团也卷好
  • 19.并排竖直放入面包桶中
  • 20.将面包桶再放回面包机中,继续程序
  • 21.发酵好的面团
  • 22.烘烤完毕
