京味儿月饼----自来红
“自来红”是传统的京式点心,月饼在烤制前是白面皮的,但出炉之后神奇的变成棕红色,而且月饼的上边会出现一个深红色的圆圈,这也正是“自来红”名字的来历。
  月饼上那个圆圆的红圈正宗的做法是用一份的水、一份的糖及半份的碱面熬制而成的。将这种汁液盖在月饼坯子上的时候是看不见红印的,只有月饼烤制熟了以后,红圈才会显现出来,这也是自来红月饼的神奇之处。

  • 桂花蜜20g
  • 猪油50g
  • 白砂糖30g
  • 小苏打3g
  • 开水70ml
  • 碱面10g
  • 清水20ml

Steps to make 京味儿月饼----自来红

  • 1.将白砂糖,清水,碱面在锅中混合均匀。
  • 2.小火熬至颜色变深倒入碗中备用。
  • 3.将面粉、桂花蜜、猪油、香油、小苏打、白砂糖20g放入盆中。
  • 4.加入开水揉成面团。
  • 5.将面团包上保鲜膜静置30分钟。
  • 6.将面团分成10个剂子。
  • 7.取一个剂子擀成牛舌状。
  • 8.从一边卷起。
  • 9.再竖着放置。
  • 10.再擀开。
  • 11.从一边卷起。
  • 12.依次做好剩余的剂子。
  • 13.将一个剂子按扁。
  • 14.包上五仁馅。
  • 15.用手的虎口封口。
  • 16.封口朝下按一下。
  • 17.依次做好剩下的月饼胚。
  • 18.用可乐盖沾上水印戳在月饼上按印。
  • 19.在烤盘上垫上油纸,放上月饼。
  • 20.烤箱180度预热,放入烤盘,中层,上下火烤20-25分钟即可。
