【萝卜小咸菜】--老辈子的味道
“冬吃萝卜”,是北方老百姓家喻户晓的一句话,也是一句胶东老百姓流传甚广的营养口号,每年冬天把萝卜收了回来,就要挑出一些来晒咸萝卜,另外留下一些来现吃,再剩下的就要全部把它们埋到菜窖子里,准备着这一冬好吃。

这些咸萝卜是农村过冬的必备菜之一,这是用最古老的方法晒的。把萝卜从头处切成块但萝卜尾那不能切断要连起,这样晒的时候是一个整萝卜。把萝卜打好花(切好)后,要用盐渍一到两天,然后就挂在房外在枝子上一直这么晒,一直晒到下雪了,再收回来,放在坛子里存着,现吃现拿。

当您要吃的时候,先把咸萝卜在清水里泡洗一下,也或用清水泡1-2个小时左右(泡的时间根据自己的口味),然后切成小块,想吃很Q的就多洗几次然后直接拌着吃;想吃口感稍淡点的,再根据自己的口味调理一下就行了,保证您吃起来咯蹦脆。

  • 1.主料:青萝卜2个
  • 2.青萝卜切成拇指粗细的长条
  • 3.将萝卜条一层层放入一容器中,放一层萝卜撒一层盐,一直重复此动作、盐渍一到二天时间
  • 4.将盐渍的萝卜条摆到饺子帘上,放到通风处晾晒至干
  • 5.晾晒至干后即可收取保存
  • 6.食用时将萝卜干用清水泡发1-2个小时,将咸味泡除掉
  • 7.然后再放至饺子帘上晾1天时间
  • 8.将凉好的萝卜干置入一容器中,加入鱼酿酱油1大勺、鱼露2小勺、香油2小勺、辣椒油5大勺、五香粉1小勺、葱油2大勺、绵白糖2大勺
  • 9.搅拌均匀即可食用
