栗子紫薯月饼

PS:1.以下配方可以做50克16个,月饼皮15克,月饼馅35克,按3:7计算。2.每个烤箱不同,温度和时间略有不同。3.转换糖浆的制作参考我的菜谱“转化糖浆”具体做法。4.栗子紫薯馅料做法参考我的菜谱“栗子紫薯馅”5.成品图是没有回油的拍照的,广式月饼要回油更漂亮好吃。

  • 奶粉10克
  • 转化糖浆85克
  • 枧水5克
  • 色拉油30克
  • 栗子紫薯馅560克

Steps to make 栗子紫薯月饼

  • 1.把栗子紫薯馅料做好的放凉;
  • 2.栗子紫薯馅料按35克一个小团分好;
  • 3.月饼皮的制作:中筋粉、奶粉过刷;
  • 4.枧水、转化糖浆、色拉油拌均;
  • 5.把过刷的粉加入拌均的液体盆中拌均;
  • 6.揉成光滑的面团,静放1小时;
  • 7.月饼皮分成15克一个小团;
  • 8.月饼皮用手压扁;
  • 9.放入栗子紫薯馅;
  • 10.包裹好馅,揉成光滑的圆;
  • 11.放入月饼模具中;
  • 12.做好的月饼胚放入烤盘,喷上一层水;
  • 13.烤箱预热,170度,20分钟,其中,烤5分钟取出涂一层蛋液,放入继续烤15分钟。
  • 14.烤好的月饼,放凉,装好在月饼盒中,密封等3-5天回油就好吃了。
