铁锅炖鱼贴饼子
“铁锅炖鱼贴饼子”是《舌尖2》第三集“时节”中出现的一道地道的东北菜。
记得小的时候,家里还是用的柴火灶,灶上是大大的铁锅,奶奶炖鱼或者炖鸡的时候都会在锅边沿贴上几个粗粮的饼子,往往是菜还没有端上桌,那几个饼子就被我和老弟给抢光光了。
现在没有柴火灶,也没有大大的铁锅,就在煤气灶上小小的试验了一把,虽然没有奶奶做的那么棒,但是总算有了几分记忆里的味道。蘸着鱼汤的玉米饼子味道特别好吃哦。

  • 小麦面100g
  • 青椒1个
  • 红椒1个

Steps to make 铁锅炖鱼贴饼子

  • 1.玉米面和小麦面粉各半,再加入一小勺泡打粉
  • 2.混合均匀
  • 3.慢慢倒入热水
  • 4.用筷子搅拌成絮状
  • 5.揉成面团醒发
  • 6.醒发面团的时候可以准备炖鱼的材料
  • 7.鲫鱼处理干净后在鱼身打花刀,抹上盐和料酒,放姜丝腌制十分钟
  • 8.青红椒切丝,准备各种配料
  • 9.锅烧热,用生姜抹一遍锅底
  • 10.加入油
  • 11.油烧热后放入鲫鱼
  • 12.一面煎好之后翻面,将两面都煎至金黄
  • 13.将煎好的鲫鱼盛出
  • 14.锅中热油,放入姜蒜大料干辣椒
  • 15.放入豆瓣酱
  • 16.炒出香味
  • 17.将煎好的鲫鱼放入锅内
  • 18.倒入水
  • 19.加入生抽,老抽,料酒
  • 20.加入糖小火炖
  • 21.将面团分成剂子,做成圆饼
  • 22.将做好的玉米饼子贴在锅边沿,盖上锅盖慢炖
  • 23.饼熟后,放入青红椒丝断生,略收汁就可以出锅了
