莲藕排骨汤

  • 排骨650g
  • 莲藕350g
  • 胡萝卜1根
  • 啤酒500ml
  • 小香葱2根
  • 金针菇100g
  • 口蘑4个
  • 杏鲍菇100g
  • 生抽1勺
  • 红烧酱油1勺
  • 蒸鱼豉油1勺
  • 冰糖4颗
  • 3片
  • 丁香3颗
  • 花椒1小把
  • 桂皮1小块
  • 肉豆蔻1个
  • 草果1个
  • 干辣椒3个
  • 陈皮1块
  • 八角1颗
  • 香油几滴

Steps to make 莲藕排骨汤

  • 1.排骨切大块,放入冷水中,倒入料酒,从冷水开始加热,焯水。
  • 2.焯好水后,倒入沥水筐,用热水冲掉浮沫。
  • 3.口蘑和杏鲍菇洗净沥水掰大块。
  • 4.姜片、丁香、花椒、八角、桂皮、肉豆蔻、草果、干辣椒、陈皮放入调料盒,扣好。
  • 5.铸铁锅内热油,放入4颗冰糖,中火炒糖色。
  • 6.冰糖融化后,倒入焯好的排骨,翻炒到略棕色。
  • 7.倒入蘑菇。
  • 8.淋入生抽、红烧酱油、蒸鱼豉油,放入小香葱。
  • 9.放入调料盒,倒入500ml啤酒。
  • 10.盖上盖,大火烧到咕嘟咕嘟开锅后,转小火,炖1小时。
  • 11.排骨炖大约55分钟后,开始准备莲藕和胡萝卜。莲藕和胡萝卜洗净、削皮、切大块。
  • 12.莲藕倒入铸铁锅中,金针菇洗净切去老根,倒入铸铁锅中,盖盖炖15分钟。
  • 13.胡萝卜倒入铸铁锅中,盖盖炖5分钟。
  • 14.撒入香菜,滴入几滴香油。
  • 15.完成✅
