鲜肉月饼
全家都爱吃鲜肉月饼,没有猪油用植物油做,挺好的,起酥效果还不错。

  • 肉糜200g
  • 鸡蛋1只
  • 料酒1勺
  • 蚝油1大勺
  • 白糖5g
  • 植物油150g

Steps to make 鲜肉月饼

  • 1.肉糜中放入葱,蚝油,料酒,淀粉,白糖,盐顺一个方向,搅拌上劲。
  • 2.制作油酥皮:面粉90克、植物油90克,将面粉与植物油混合,揉成面团。
  • 3.制作水油皮:将面粉150克、植物油60克、水90ml,倒入容器中,揉成面团松弛15分钟。
  • 4.把2种面团分别分成12份,上面的是油酥皮面团,每个约15克,下面的是水油皮面团,每个约25克
  • 5.把油酥面团放在压扁的水油皮面团上,把油酥面团包起来。
  • 6.包好的面团收口朝下放在案板上,松弛15分钟。
  • 7.用擀面杖擀成长椭圆形,然后从上往下卷起来。
  • 8.把卷好的面团再次擀成长椭圆形面片,再从上往下卷起来
  • 9.松弛15分钟。
  • 10.取1个面团,擀成圆形,将鲜肉馅(约20克)放在面片中央包起来。
  • 11.将包好的面团收口朝下,松弛5分钟。
  • 12.轻轻压扁,依次放在烤盘上,并刷上鸡蛋液
  • 13.把烤盘放进预热好的烤箱,中层200度,烤25分钟左右,烤到表面金黄色就可出炉
