  • 1.猪腰子洗净一剖两片,除去膜,去掉白色的筋。
  • 2.打麦穗花刀。
  • 3.打好花刀的腰子,切成菱形长条。
  • 4.打好花刀的腰子用色拉油和干粉抓匀,静置5分钟。
  • 5.将泡发黑木耳撕小块,胡萝卜洗净切菱形片;小葱切段、蒜切片备用。
  • 6.将老抽1/2勺、醋1/3勺、水淀粉2勺、料酒1勺放入碗中,调匀成味汁后放入小葱段。
  • 7.锅置火上加入油,旺火烧至九成热,倒入腰花滑油至卷缩成麦穗状迅速捞出。(该步骤最好控制在30秒内完成)
  • 8.将过油后的腰花控油待用。
  • 9.锅留底油将蒜片煸香,依次下入胡萝卜、黑木耳翻炒。
  • 10.锅中加入腰花,迅速倒入味汁颠翻三次,出锅即可。
