【烤鲅鱼干】--地道的胶东特色咸鱼干
在胶东半岛,鲅鱼是渔民下海开捕的头一批收获物,而有“第一鱼”的名声。每到春汛和秋天开海,新鲜晶亮的大鲅鱼一上市,家家户户的餐桌顿时多了这道鱼肴,人们都以吃上鲜美的鲅鱼为快,鲅鱼的做法很多,可红烧、可炖、可酱焖、可腌制。新鲜的鲅鱼一般都用来做鲅鱼馅饺子,而“擦皮”鲅鱼基本上都用来晒成咸鱼,所谓“擦皮”的鲅鱼是我们当地人的土称,是指渔船打上来的鲅鱼,在打捞过程中鱼与鱼之间相互的摩擦将有些鲅鱼的外表鱼皮给擦破了,这种“擦皮”的鲅鱼因外观不好,在市场上卖不上好的价格,所以大部分都用来晒成鲅鱼干。
咸鱼的最佳搭配就是玉米饼子,这二者是胶东人饮食习俗中的最佳组合,它们陪伴胶东人艰难度日,温饱岁月,是它们给胶东人的餐桌增添了别致风味,特别是对那些上了点岁数的人来说,日子里缺了咸鱼、饼子的点缀,生活似乎就少了些许滋味。
用鲅鱼晒成咸鱼干,其实做法非常简单,我这次做的鲅鱼干,改变了传统的一些做法,一是用盐少;二是晒的时间短。传统的做法是用海盐将鲅鱼腌制起来,最后晒成很干很硬的鲅鱼干,因为以前家里没有冰箱等现代电器,鲅鱼干必须多用盐而且要晒的很干,这样容易保存;现在做鲅鱼干其实不需要用太多的盐,现代人们都讲究健康,吃盐多了对身体不好,再就是晒好的鲅鱼干放入冰箱冷冻保存即可,而且吃的时候取出即烤就好,烤出来的鲅鱼干、肉质金黄软嫩,咬一口满嘴流油,一口咸鱼、一口饼子,怎一个“爽”字了得。

Steps to make 【烤鲅鱼干】--地道的胶东特色咸鱼干

  • 1.主料:擦皮鲅鱼2条
  • 2.鲅鱼去除内脏洗净、平刀从鲅鱼尾部切入,紧贴鱼骨向鱼头部片切,一面片完同样操作办法再片另一面
  • 3.将片好的鱼放入一容器中,撒入盐,并均匀涂抹,腌制24小时
  • 4.将腌制好的鱼放入晒网中,至于通风处,晾晒一天即可
  • 5.晒好的鲅鱼干
  • 6.将晾晒好的鲅鱼干切成块状,涂抹一层食用油
  • 7.放入烤箱180度上下火烤制10分钟即可
  • 8.趁热将辣椒面撒到烤好的鲅鱼干上
