老婆饼~听起来感觉很柔软很温馨,老婆饼是起源自广东潮州的一款中式点心,外皮烤成诱人的金黄色,里头一层层的油酥薄如棉纸,酥松得不得了,一咬下去碎屑便掉了满地,每一口都尝得到蜜糖般的香甜滋味!好似老婆给你一个甜蜜的香吻和拥抱!

Steps to make 老婆饼

  • 1.先制作馅料,奶锅中放入白糖70克,猪油35克,水110克,同时称出糯米粉和椰蓉,椰蓉没有可以不用
  • 2.奶锅坐火上中小火烧开,倒入糯米粉70克快速翻拌均匀,此时将火转为小火;糯米粉是生的,没有炒熟,在这开水里一烫还能不熟?别担心哦。。。。
  • 3.全部拌匀后关火,放入白芝麻、椰蓉拌匀
  • 4.拌匀的馅料平铺在盘子中,刚做好的馅料比较沾手,用保鲜膜盖好,放入冰箱冷藏
  • 5.准备2个碗,分别放入油皮和油酥的全部材料,油皮:中粉100克,猪油10克,白糖15克,水50克;油酥:中粉80克,猪油40克
  • 6.油酥切拌成团,油皮揉成光滑的面团,面团盖保鲜膜醒发三十分钟左右
  • 7.油皮和油酥分别分成15个,平均分开即可,搓圆后盖保鲜膜静置一会
  • 8.静置后的油皮包入油酥,捏紧收口,依次全部做完,盖保鲜膜静置一会
  • 9.冷藏后的馅料平均分成15份
  • 10.取一个面团压扁、擀开成牛舌状,自上而下卷起,和做蛋黄酥是一样,这是第一次擀卷
  • 11.面团静置一会,压扁、擀开做第二次擀卷
  • 12.取面团擀开,包入馅料,捏紧收口
  • 13.做好的老婆饼放入空气炸锅的炸蓝中,炸蓝中不用铺油纸,面团表面先刷蛋液,后用小刀划上三道口子,避免在烘烤过程中爆馅
  • 14.空气炸锅按功能键选择蛋挞,温度设定200度,时间设定18分钟,长按预热按键,开始预热,默认预热时间5分钟,这5分钟不占用设定的烘烤时间,预热的时候,炸蓝不要放进去
  • 15.预热结束有提示音,打开盖子放入炸蓝,合上盖子后,炸锅会自动运行,直至烘烤时间结束;炸锅有通明视窗,隔一会就亮起来,方便看到烘烤的情况;
  • 16.烤出的成品不错,趁热先吃一个
