Steps to make 芋儿鸭

  • 1.准备食材
  • 2.鸭肉切块冷水下锅焯水,加入两茶匙料酒
  • 3.焯水的鸭肉捞出洗净备用,芋头切块加用清水浸泡(加点盐以防芋头变黑)
  • 4.起油锅倒入适量底油烧至七成热下花椒,八角煎,姜片,爆香
  • 5.加入豆瓣酱爆香
  • 6.倒入鸭肉,加入两茶匙料酒翻炒五分钟
  • 7.倒入没过鸭肉的水(水多点),加入两茶匙老抽,葱段
  • 8.大火烧开改中小火烧四十分钟
  • 9.倒入芋头改大火烧制
  • 10.待汤汁浓稠加入半茶匙鸡粉,三分之一茶匙盐调味即可出锅
