腌糖醋洋姜
洋姜,最常见的吃法就是腌制。
有一种腌洋姜叫做“FU洋姜”,不知道那个字怎么写,只知道人们都这么念。颜色很深,深如酱色,口味酸甜,或许甜要多一点吧?
市场上有卖,不过只有一个如昙花一现般的老婆婆卖的,看起来像是早年所见过的感觉。不知道那个老婆婆还会不会出现,也不知道怎么做。
四下搜寻,检出这个做法,不知道会不会是早年的味道?等待的时间不算长,10天。听起来不长,而距制作的时间,却感觉却好像有一个世纪那么远。按照封条的时间开坛,其实已多出了一天,因为不空。
切片,撒味精,淋香油。评价是,这个味道还不错。不过,要自己说么。大料的味道是不是有点太突出了,而花椒也可以略略少两颗。香油可以不要,喜欢辣味的,当然也可以浇点红油辣酱。不过,最好还是不要。。。

Steps to make 腌糖醋洋姜

  • 1.洋姜洗净
  • 2.放入网筛中晾2-3天,脱去部分水分
  • 3.用料:洋姜500克,白糖200克,醋300克,酱油100克,花椒少许,八角少许,桂皮少许,香油少许,味精少许
  • 4.将糖,醋,酱油倒入锅中
  • 5.加入花椒,八角,桂皮
  • 6.至火上烧沸,转小火,熬煮至香料的香味充分溶出
  • 7.熄火,晾凉
  • 8.将洋姜放入陶罐中
  • 9.倒入冷却后的香料汁
  • 10.将浮起来的洋姜压下去,
  • 11.使洋姜完全浸泡在汤汁里
  • 12.加盖,密封存放10天左右
  • 13.揭盖
  • 14.捞出洋姜
  • 15.切片
  • 16.加入少许味精和香油拌匀食用
