红焖肉
吃了一周的素,今天买了五花肉,做个红焖肉给家人解解馋。

  • 秘制红烧汁2勺
  • 生抽1勺
  • 冰糖30g
  • 1勺
  • 鸡精1勺

Steps to make 红焖肉

  • 1.五花肉清洗干净。
  • 2.切肉前把刀磨一下,这样切起来比较容易。
  • 3.先把肉切成1.5厘米宽的长条,再切成小块。
  • 4.切好的肉放盆中备用。
  • 5.锅中倒入清水,冷水下锅,把猪肉块焯水,用冷水煮开焯的猪肉,能慢慢把里面的血水煮出来,要是用开水,蛋白质预热凝固,血水就出不来了。
  • 6.焯水时加入料酒去腥。
  • 7.随着锅内水的温度增加,血沫慢慢出来了,用漏勺反复翻拌,让肉均匀受热。
  • 8.焯水后用流水冲洗干净,沥干水份。
  • 9.准备调料,葱姜段、干辣椒、冰糖、秘制酱汁、生抽,我用了炖肉包,就没放其他调料。
  • 10.锅内放油,下入冰糖小火慢慢熬制。
  • 11.熬到冰糖融化,出现焦黄色。
  • 12.下入葱姜辣椒,爆出香味。
  • 13.下入五花肉。
  • 14.反复翻炒,让肉块均匀粘上糖色,也炒出五花肉的多余油脂,这样吃起来才香而不腻。
  • 15.炒好后加入秘制酱汁调色。
  • 16.加入生抽。
  • 17.炒出漂亮的颜色,要想红焖肉颜色漂亮,一定要炒到每块肉都上色后才加水。
  • 18.把肉倒入高压锅里,加入料包和盐。
  • 19.加入鸡精。
  • 20.倒入开水,不要倒凉水,凉水会使肉突然遇冷变硬,影响口感。
  • 21.大火煮15分钟。
  • 22.出锅。
