常熟叫化鸡,产于中国江苏常熟。 属于江浙菜。其历史悠久,通常是把加工好的鸡用泥土和荷叶包裹起好,用烘烤的方法制作出来的一道特色菜。中秋佳节,当然应该做点不一样的美食犒劳自己!

Steps to make 常熟叫花鸡

  • 1.三黄鸡一只,清洗干净。
  • 2.准备腌制调料:白砂糖、姜、生抽、料酒、五香粉、干辣椒、蚝油、胡椒粉。
  • 3.将三黄鸡去爪和屁股,置入腌料中,将腌料均匀的涂抹鸡的内外。腌制过夜。腌制过程翻身一次。
  • 4.准备适量香菇、青辣椒、牡蛎。
  • 5.炒熟,装入三黄鸡的肚子内。
  • 6.用棉线将三黄鸡的肚子部分多扎几圈,以免肚子里的食物漏出。将三黄鸡浑身涂上适量的花生油;取干荷叶一张,清洗干净。
  • 7.用荷叶将三黄鸡包裹起来。用棉线多扎几圈,扎牢。
  • 8.准备适量面粉。
  • 9.面粉中加入适量的料酒和水,揉成面团。
  • 10.将面团擀开,摊成比较厚的面饼。将荷叶鸡置入面饼中;用面饼,将荷叶鸡包裹起来。
  • 11.烤盘上放一张锡箔纸,将包裹好的鸡放入烤盘中。
  • 12.烤制时间:200度,1.5个钟头。
