广式五仁月饼

五仁月饼馅料没有太多限制,只要把你喜欢的干果,或者葡萄干之类的果脯,掺在一起,美味就诞生啦!

  • 中筋面粉160克
  • 转化糖浆110克
  • 玉米油30克
  • 枧水3克
  • 炒熟的葵花籽100克
  • 炒熟的花生仁100克
  • 炒熟的核桃仁100克
  • 炒熟的南瓜籽100克
  • 炒熟的黑芝麻50克
  • 冰糖100克
  • 糖桂花100克
  • 熟糯米粉100克
  • 表面刷蛋液一个蛋黄+一勺蛋清

Steps to make 广式五仁月饼

  • 1.五仁馅的果料分别小火炒熟,搓掉花生的红皮及核桃的薄衣,并适当擀碎;冰糖用刀拍成小块;
  • 2.全部五仁材料入盆中,搅拌均匀
  • 3.拌成粘合的团状,如果太稀,不能成团,可再适量增加熟糯米粉
  • 4.糖油皮的液体材料入盆
  • 5.混合均匀
  • 6.倒入面粉
  • 7.用橡皮刮刀拌成光滑的面团,盖保鲜膜,饧一小时左右,最好入冰箱冷藏再用,防止粘手
  • 8.面团和五仁馅按比例分成同等的15份
  • 9.取一份面团,压成小扁饼,放一份五仁馅在上面
  • 10.将面团和馅置于掌心及虎口之中,一点点把馅包严,成球状
  • 11.包好的月饼生胚抹上一层手粉,然后放进模具中
  • 12.在烤盘中轻轻按压两下,然后提起,其他面团和馅料依次操作完成;在完成一半月饼生胚时,可开始预热烤箱,上下火,200度
  • 13.入烤箱前,用喷水壶在月饼表面喷一层清水,然后入烤箱中层,200度,上下火,烤5分钟左右
  • 14.待表面定型后,取出,在表面轻刷一层蛋液;重新入烤箱,烤15分钟左右,待表面金黄,腰略有鼓起可出炉
  • 15.晾架上晾凉,然后入密封罐保存,等一两天回油,即可食用
  • 16.第二天略有回油,还不错啦
