俗话说,腊月二十八把面发,腊月二十九蒸馒头,今年没蒸馒头,蒸个简单的小零食,好看好吃还有营养,而且“蒸”字好寓意,来年蒸蒸日上哈!比起蒸馒头可简单多了,不用发面,和成面团包上馅,上屉一蒸就OK了,晶莹剔透,Q弹粘糯,看着就有食欲,蒸一锅没到吃饭的时候就没了,全家人都爱吃。

Steps to make 冰皮红豆薏仁月饼

  • 1.准备食材:西米、玉米淀粉、白糖(我用了30g,根据自己喜欢的口味添加)。
  • 2.将西米放入容器中,加入适量的白糖,喜欢甜食的朋友可以多加点,加入没过西米的纯净水,浸泡15分钟。
  • 3.浸泡后的西米已成糊状,用筷子搅拌一下就碎了,颗粒基本泡开即可。加入淀粉揉成面团,然后将面团一分为二,一半再加一小勺紫薯粉揉成紫色的面团。
  • 4.取红豆薏仁丸8粒,打开包装,可以直接吃的哦,当然也可以直接做馅料。
  • 5.将两个面团各留一份,剩余部分搓成长条,像扭麻花一样扭在一起,再揉成长条,均匀分成约50g一个面剂子。这个红豆薏仁丸有点小,所以50g的面团包上馅用模具刚刚好。将油纸裁成小块,一块油纸能放下一块月饼即可,取一个面团压扁慢慢用手推薄,包入备好的红豆薏仁丸,虎口慢慢向上推移,使面皮均匀的包裹住馅料,收口搓圆,不能有缝隙,放入模具挤压成型。
  • 6.这款小月饼是需要蒸熟的,因为西米我们用的是生粉,什么蒸锅都可以,将做好的月饼码入电饭煲的蒸帘上。
  • 7.盖好上盖,接通电源,设置20分钟,启动电源。
  • 8.时间到,打开锅盖,在锅里颜色非常漂亮,出锅后颜色有点深了,可以少许加紫薯粉。
  • 9.出锅装盘。
