酸奶抹茶蛋糕
曾几何时看到其它朋友的抹茶蛋糕,那正正的绿色真是让人食欲大增。大家一定要切记,做抹茶的蛋糕、面包或者是饼干,一定要选择质量好的抹茶,才会味道又好,色彩也亮丽。我这次用的是若竹的抹茶,后来在I烘焙又订购了五十铃的抹茶。总之好的抹茶是成就一份完美抹茶蛋糕的关键哦。

  • 蛋白160克
  • 细砂糖15克
  • 蛋黄80克
  • 自制浓稠酸奶70克
  • 低粉70克
  • 抹茶粉10克
  • 玉米油40克

Steps to make 酸奶抹茶蛋糕

  • 1.将抹茶粉和低粉一起称量好。
  • 2.低粉和抹茶粉混合过筛。
  • 3.浓稠酸奶中加入玉米油,用手动打蛋器搅打均匀。
  • 4.然后倒入细砂糖15克,继续搅打均匀。
  • 5.依次将蛋黄倒入,每倒入一枚就用打蛋器将其和酸奶糊搅打均匀。
  • 6.然后将抹茶粉过筛倒入蛋黄糊中。
  • 7.用手动打蛋器画Z,将其混合均匀。
  • 8.分三次加入细砂糖,将蛋白打发至混性发泡即可。
  • 9.取三分之一的蛋白加入抹茶蛋糊中,搅拌均匀。
  • 10.然后将拌好的蛋糊倒入其余的蛋白中,搅拌均匀。
  • 11.将蛋糊倒入中空模具中,震几下去除气泡。送入提前预好175度的烤箱,上下火,中层,大约烤30分即可。
  • 12.烤好后的蛋糕,倒扣,晾凉脱模即可。
