杂粮果仁月饼
每年中秋佳节,爱烘焙的人都会为家人和朋友做月饼。我也不例外。这款月饼是为家人做的,所以把馅料改良了一下。添加了木糖醇,减少了蔗糖的分量。并且添加了燕麦片和亚麻籽等健康食材。以下就将这款月饼分享给大家。

  • 麦芽糖醇糖浆125g
  • 亚麻籽15g
  • 黑芝麻50g
  • 熟糯米粉70至80g
  • 松子仁30g
  • 甜杏仁35g
  • 花生米50克
  • 凉开水80至100g
  • 花生油40g
  • 麦芽糖醇15g
  • 木糖醇25g
  • 莲子泥90至100g
  • 核桃仁35g
  • 燕麦片15g
  • 白芝麻30g

Steps to make 杂粮果仁月饼

  • 1.将转化糖浆倒入大点的盆中,加枧水搅匀, 加入植物油(玉米油或花生油)搅拌;
  • 2.筛入面粉,先用刮刀切拌至无干粉,用手搓成团。盖保鲜膜醒30分钟。.
  • 3.将芝麻炒熟、燕麦、亚麻籽分别炒熟备用;.

  • 5. 将事先做好的莲子泥与糯米粉(70g)倒入大一点的深盘中,加入水(85g)和木糖醇以及麦芽糖醇和匀。倒入所有炒熟的杂粮和果仁,与糯米莲子泥和成团,(如果和不成团,就在加入少许水和糯米粉);.
  • 6.将饼皮20克/个,馅30克/个各分成18个份,揉圆备用,取一份饼皮,用手掌压扁;.
  • 7.包入一份五谷果仁馅;
  • 8.一边转一边借助虎口来向上推饼皮,使它均匀的将馅完全包住,然后收紧口,收口后滚成光滑的圆球状;
  • 9.模具里撒入适量面粉,转一圈磕出多余的粉,这样模具内会均匀的覆盖一层面粉,达到防粘的目的将月饼胚放进模具;.
  • 10.用手将月饼胚轻轻的压平,让其尽量贴住模具的四围。模具用力一压,再将月饼推出,完成一个。将其余的饼皮包好馅,用模具做成月饼胚;.
  • 11.烤箱175℃预热,用喷壶往月饼上喷适量净水,将月饼放入烤箱中层,上下火5分钟。.
  • 12.取出月饼胚,用羊毛刷给月饼表面刷层蛋黄液。.
  • 13.再继续烤10-12分钟,表面金黄色即可出炉(烤制总时长15-17分钟)。.
  • 14. 烤好的月饼晾凉后放入干净的有盖保鲜盒中,静置2-3天,等待回油。.
  • 15.回油好的月饼饼皮油润光亮,整个月饼软硬适中,香甜可口。
