麻辣鲜香的水煮肉片来咯,肉片软嫩、汤汁红亮麻辣,很下饭哦。每次去饭店我必点的一道菜,今天我也自己来做一回,原本抱着试试的想法做的,没想到竟然成功了,味道很好,那就分享给大家我的做法吧。

  • 猪里脊肉120g
  • 3g
  • 料酒5g
  • 生抽10g
  • 淀粉10g
  • 干红辣椒4个
  • 花椒1g
  • 蒜瓣10g
  • 黄豆芽50g
  • 豆腐丝50g
  • 生菜半颗
  • 小红油20g
  • 白芝麻1g(熟)

Steps to make 水煮肉片

  • 1.猪里脊洗净切薄片,越薄越好,放入醋、料酒、生抽、淀粉抓匀腌制30分钟到一小时左右;
  • 2.干红辣椒用水浸泡软后擦干水分用剪刀剪成丝;
  • 3.用压蒜器将蒜瓣压成蒜泥,没有压蒜器就用刀剁成末;
  • 4.热锅冷油放入花椒和辣椒丝煸炒出香味,用最小的火,然后油留在锅内,捞出花椒和辣椒丝备用;
  • 5.放入黄豆芽、豆腐丝翻炒1分钟,这时中火;
  • 6.放入适量盐、仲景香辣小红油翻炒均匀;
  • 7.倒入适量热水煮开将菜断生;
  • 8.放入生菜叶焯一会儿,不要过头;
  • 9.将所有的菜捞出,生菜叶铺在最底下,豆芽、豆腐丝放在中间;
  • 10.将腌制好的肉片放入锅内余下的沸水中焯熟;
  • 11.捞出肉片放到菜里,放入之前煸炒过的辣椒丝、花椒,肉片最顶上放蒜泥,撒一些白芝麻;
  • 12.将热油浇在蒜泥上,拌均匀,然后倒入适量汤汁即可;
  • 13.成品;
